Holi celebrates the arrival of Spring in India, after the earth emerges from the throes of winter, ready to partake in the many joys of longer sunnier days and bountiful crops.
Holi also symbolizes the blossoming of love and the triumph of good over evil: based on legends about the victory of Lord Vishnu as Narasimha over Hiranyakashipu. In northern India, it marks the onset of a good spring harvest season. To celebrate this festival, people joyfully splash each other with brilliant water based colors, and apply colored powders on family and friends. Families cook a variety of savory and sweet delicacies to mark this occassion, also known as the Festival of Colors.
